Apple Oat Quick Bread

Recipe by Nicole Thom-Arens Makes 1 Loaf
I love a good quick bread for a weekend breakfast or afternoon snack. With this recipe, I wanted to make something that was full of flavor and reminiscent of fall. The pumpkin spice mix adds complexity to this loaf that cinnamon by itself can’t deliver. Seasoning the apple with a bit of sugar and cinnamon before adding it to the batter brings out the apple flavor.
Ingredients:
1 egg1/3 cup brown sugar, lightly packed1/2 cup milk mixed with 2 teaspoons vinegar (or 1/2 cup buttermilk)1/4 cup unsweetened applesauce1/4 cup coconut oil1/2 teaspoon kosher salt2 teaspoons baking powder1/2 cup rolled oats1/2 cup all-purpose flour1 cup whole wheat flour1 teaspoon pumpkin spice mix 1 Granny Smith apple1 tablespoon granulated sugarSprinkle of cinnamon
Streusel Topping2 tablespoons rolled oats2 tablespoons whole wheat flour3 tablespoons brown sugar1/4 teaspoon pumpkin spice mix2 tablespoons unsalted butter, cold
Instructions:
1. Preheat oven to 400 degrees. 2. Grease a standard loaf pan. 3. Peel and dice the apple. 4. Toss the apple pieces with a tablespoon of granulated sugar and a sprinkle of cinnamon. Set aside. 5. Make streusel topping by mixing the oats, flour, sugar, and spice mix. Cube the cold butter and cut it into the flour and spice mix using a pastry cutter until crumbs form. Set aside.6. Melt 1/4 cup of coconut oil in the microwave or on the stove top. Cool slightly. 7. In a large mixing bowl, whisk the egg and brown sugar together until foamy and well combined. 8. Add milk, applesauce, coconut oil, salt, and baking powder. Whisk to combine. 9. Add the apple with seasonings and any juice in the bowl. Mix. (I switch to a wooden spoon here.)10. Add oats, flours, and spice mix. Stir until just combined. 11. Pour batter into the greased loaf pan. Smooth out the batter to reach the corners using a rubber spatula or wooden spoon. 12. Cover the top of the batter with the streusel topping, pressing it into the batter so that it doesn’t just crumble off after it’s baked. 13. Bake at 400 degrees for 40-45 minutes. Test doneness when a toothpick comes out clean and dry. 14. Cool in the pan for 10 minutes then remove from the pan and cool completely on a cooling rack before serving.
