Brown Butter Beer Bread
Recipe by Nicole Thom-Arens
Makes 1 loaf
This recipe was inspired by Hot Pie in Game of Thrones, which I had been binge watching at the time of this recipe adaptation. Hot Pie tells Arya the secret to his pie is browning the butter—genius! Taking further inspiration from the golden brown loaves that resemble quick bread shown on the show, I thought of adapting the beer bread recipe I’ve used for more than 10 years (thanks to our friends Pat and Mary) to create brown butter beer bread. The nutty brown butter pairs beautifully with the yeasty beer for a tasty nod to a medieval television show. Slice it thick and serve it with a hearty stew or soup. Freeze leftovers for freshness.
Ingredients:6 tablespoons unsalted butter1 1/2 cups whole wheat flour1 1/2 cups all-purpose flour2 teaspoons kosher salt (Reduce to 1 teaspoon if not using Diamond.)1/4 cup brown sugar, packed3 teaspoons baking powder1 can beer (12 ounces)
Instructions:1. Preheat the oven to 375 degrees.2. Spray a loaf pan with non-stick cooking spray.3. Add the butter to a sauté pan set over medium-low heat on the stovetop. 4. While the butter is melting, add the flours, salt, brown sugar, and baking powder to a large mixing bowl. Stir to combine.5. Once the butter has melted, continue cooking until the milk solids turn a deep golden brown. Watch it carefully so not to burn the butter.6. Add the brown butter and the beer to the dry ingredients. Mix with a wooden spoon until well incorporated. 7. Add the batter to the prepared loaf pan and bake at 375 degrees for 40 to 45 minutes or until a toothpick inserted in the center of the loaf comes out clean. 8. Once baked, remove the loaf from the pan and allow it to cool over a wire rack.
