Hot Chocolate

Makes 16 cups
When I think of hot chocolate, I’m immediately transported to the picture book The Polar Express. Each Christmas, after decorating the Christmas tree, I would read Liam The Polar Express under the glow of the Christmas tree. In the story, the hot chocolate served on the train is described to be as thick as melted chocolate bars. This hot chocolate recipe is rich but not too sweet. If you like your hot chocolate sweeter, consider adding more powdered sugar to the mix or using granulated sugar in place of the powdered sugar, which will add more sweetness.
Ingredients:
Cocoa mix:1 cup powdered sugar1 cup cocoa powder2 teaspoons kosher salt (Reduce to 1 teaspoon if not using Diamond.)
Hot chocolate:2 tablespoons cocoa mix1 to 2 ounce semi-sweet chocolate1 cup whole milk
Instructions:
1. Mix the powdered sugar, cocoa powder, and salt in an airtight container. Shake to combine. 2. To make 1 cup of hot chocolate, add the milk, 2 tablespoons of the cocoa mix, and vanilla bean paste to a medium saucepan.3. Whisk the mixture while heating over medium heat on the stovetop.4. Once the cocoa and sugar have dissolved into the milk, break up the semi-sweet chocolate and add it to the saucepan. 5. Continue stirring until the milk reaches the desired drinking temperature. Do not boil. 6. Serve with homemade whipped cream or marshmallows.
