Pineapple Mango Whip

When we lived in Springfield, Missouri, the Pineapple Whip carts would set up during the summer. The cool pineapple soft serve was the most refreshing treat on the hottest days. I’ve added mango for a bit of tartness to my version, and using coconut makes it taste like a fruity pina colada. Freeze any leftovers into popsicles or in a larger container. If enjoying with a spoon, allow to thaw a bit before eating.
Ingredients:
1 cup frozen pineapple1 cup frozen mango1/2 cup coconut milk Juice of half a lime2 tablespoons granulated sugarPinch of salt
Instructions:
1) Add all ingredients to a blender.2) Blend until the consistency of soft serve. Allow the blender to do the work here. Pause to scrape down the sides a few times as needed to get a smooth consistency. 3) Enjoy!
