Spiced Waffles with Frozen Fruit Compote

Makes 10-14 Waffles (Depending on your waffle iron)
Breakfast is one of my favorite meals to make. Great foods are often designated for morning consumption only—waffles being one of them. I’ve been making homemade waffles for more than 20 years. This one has warm spices, tangy yogurt, and hearty whole wheat. All of these ingredients pack great flavor into these cute heart-shaped waffles. Make them for a weekend breakfast or weekday brinner (breakfast for dinner). Leftovers can be reheated in the toaster or microwave.
Ingredients:
Waffles:2 eggs1/4 cup granulated sugar1 1/2 cups milk (I’ve used both 1% and whole milk for this recipe without noticing any difference.)1/2 cup plain Greek yogurt (I use nonfat.)1/2 teaspoon vanilla bean paste3/4 teaspoon Kosher salt1 teaspoon baking powder2 teaspoons baking soda1 cup all-purpose flour1 cup whole wheat flour1/2 teaspoon cinnamon1/2 teaspoon cardamom 5 tablespoons unsalted butter, melted
Compote:1 cup frozen mixed fruit. (My favorite is the Cherries and Berries mix from Target.)1 to 2 tablespoons granulated sugar
Instructions: 1. For the compote, add the frozen fruit and sugar to a saucepan. Cook over medium heat until the fruit is tender and the syrup has reduced and thickened enough to coat the back of a spoon. Stir occasionally. Stir more often as the syrup gets thicker being careful not to let it burn. Once the compote is thick and sticky, remove from heat and cool slightly before serving. 2. For the waffles, melt 5 tablespoons of unsalted butter. Let cool. 3. In a mixing bowl, whisk the two eggs and 1/4 cup granulated sugar together. 4. Add milk, yogurt, vanilla bean paste, salt, baking soda, and baking powder. Whisk together until smooth. 5. Add all-purpose and whole wheat flour, cinnamon, and cardamom. Whisk until almost combined. 6. Add melted butter and whisk until almost smooth. There will be some lumps. 7. Let batter stand for 15 to 30 minutes to allow the dry ingredients to soak up the liquid. 8. Heat waffle iron. 9. After 15 to 30 minutes, give the batter one more stir. 10. Once the waffle iron is heated, add 1/4 to 1/3 cup of batter to the iron. (Follow the manufacture’s recommendation for your waffle iron.)11. Serve waffles with the warm compote and a dollop of whipped cream, sour cream, or yogurt.
